日式炼奶面包 Japanese Condensed Milk Bread


**模型可以用21cm的戚风模子 We can use a 21cm Chiffon mould

面包材料:
200克高筋面粉
25克炼奶
120克鲜奶
10克干酵母
3克盐
20克无盐奶油 (室温)

Bread Ingredients:
200g Bread Flour
25g Condensed Milk
120g Milk
10g Fine Sugar
3g Dry Yeast
3g Salt
20g Unsalted Butter (Room Temperature)

炼奶酱:
25克炼奶
25克奶油(室温)

Condensed Milk Dressing:
25g Condensed Milk
25g Butter (Room Temperature)

装饰:杏仁碎粒,蓝莓干,蔓越莓干,粗糖各少许,Mozzarella芝士(可随自己喜爱的原料)

Decoration: Some Almond Kernel, Dry Blueberry, Dry Cranberry, Raw Sugar, Mozzarella Cheese (According to own favorite)

做法:
1. 将所有面包材料混合(除奶油外),放进面包盘里,用Function 10 (Dough)搅拌至成面团,才放入溶解的牛油,继续搅拌,直到可扩展至薄膜。(先放湿的材料,再放干的材料)
2. 等待面团第一次发酵完毕,至发酵双倍大,用手按压面团,挤出空气。
3. 以面杆棍将面团杆成长方形,大约长12吋,阔8吋即可。
4. 再将面团切成4条长状,每条涂上炼奶酱。
5. 然后,将每条面团叠在一起,平均分切成8等份。
6. 放入预先涂上炼奶酱的戚风模子里,将分切好的面团垂直放入,以保鲜纸或湿布盖好,等待第二次发酵至面团阔满戚风模子。
7. 表面涂上全蛋液和剩余的炼奶酱,再撒上杏仁碎粒,蓝莓干,蔓越莓干,粗糖或巧克力豆,Mozzarella芝士,以个人喜爱装饰即可。
8. 放入预热的Bread Maker,按Oven Function,以165度烘烤25分钟即可。

Method:
1. Mix all the bread ingredients (except unsalted butter), put them into the bread pan. Use Function 10 (Dough) to knead them become a dough. Then, add in dissolved unsalted butter, continue kneading, until it expand in thin film (Put wet ingredients followed by dry ingredients).
2. Wait for the first rise of the dough until it is twice the original size, use hand to press the dough to let go the air in the dough.
3. Use a rolling stick to roll the dough into a rectangular shape, around 12 inches for length and 8 inches for width.
4. Then cut the dough into 4 long pieces, apply some condensed milk dressing on each of the dough piece.
5. After that, pile up all the dough pieces and divide them into 8 pieces.
6. Put them vertically into the Chiffon mould which has been applied with condensed milk dressing, cover them well with plastic wrap or wet cloth, and wait for second rise until the dough pieces fill up the Chiffon mould.
7. Apply the remains egg cream and condensed milk dressing on the dough pieces, and sprinkle some almond kernels, dry blueberries, dry crabberries, raw sugar or chocolate nuts, mozzarella cheese according to own favorite.
8. Put it into the preheat bread maker, use oven function, bake it at 165'C for 25 minutes.
