日式炼奶面包 Japanese Condensed Milk Bread
**模型可以用21cm的戚风模子 We can use a 21cm Chiffon mould
面包材料:
200克高筋面粉
25克炼奶
120克鲜奶
10克干酵母
3克盐
20克无盐奶油 (室温)
Bread Ingredients:
200g Bread Flour
25g Condensed Milk
120g Milk
10g Fine Sugar
3g Dry Yeast
3g Salt
20g Unsalted Butter (Room Temperature)
炼奶酱:
25克炼奶
25克奶油(室温)
Condensed Milk Dressing:
25g Condensed Milk
25g Butter (Room Temperature)
装饰:杏仁碎粒,蓝莓干,蔓越莓干,粗糖各少许,Mozzarella芝士(可随自己喜爱的原料)
Decoration: Some Almond Kernel, Dry Blueberry, Dry Cranberry, Raw Sugar, Mozzarella Cheese (According to own favorite)
做法:
1. 将所有面包材料混合(除奶油外),放进面包盘里,用Function 10 (Dough)搅拌至成面团,才放入溶解的牛油,继续搅拌,直到可扩展至薄膜。(先放湿的材料,再放干的材料)
2. 等待面团第一次发酵完毕,至发酵双倍大,用手按压面团,挤出空气。
3. 以面杆棍将面团杆成长方形,大约长12吋,阔8吋即可。
4. 再将面团切成4条长状,每条涂上炼奶酱。
5. 然后,将每条面团叠在一起,平均分切成8等份。
6. 放入预先涂上炼奶酱的戚风模子里,将分切好的面团垂直放入,以保鲜纸或湿布盖好,等待第二次发酵至面团阔满戚风模子。
7. 表面涂上全蛋液和剩余的炼奶酱,再撒上杏仁碎粒,蓝莓干,蔓越莓干,粗糖或巧克力豆,Mozzarella芝士,以个人喜爱装饰即可。
8. 放入预热的Bread Maker,按Oven Function,以165度烘烤25分钟即可。
Method:
1. Mix all the bread ingredients (except unsalted butter), put them into the bread pan. Use Function 10 (Dough) to knead them become a dough. Then, add in dissolved unsalted butter, continue kneading, until it expand in thin film (Put wet ingredients followed by dry ingredients).
2. Wait for the first rise of the dough until it is twice the original size, use hand to press the dough to let go the air in the dough.
3. Use a rolling stick to roll the dough into a rectangular shape, around 12 inches for length and 8 inches for width.
4. Then cut the dough into 4 long pieces, apply some condensed milk dressing on each of the dough piece.
5. After that, pile up all the dough pieces and divide them into 8 pieces.
6. Put them vertically into the Chiffon mould which has been applied with condensed milk dressing, cover them well with plastic wrap or wet cloth, and wait for second rise until the dough pieces fill up the Chiffon mould.
7. Apply the remains egg cream and condensed milk dressing on the dough pieces, and sprinkle some almond kernels, dry blueberries, dry crabberries, raw sugar or chocolate nuts, mozzarella cheese according to own favorite.
8. Put it into the preheat bread maker, use oven function, bake it at 165'C for 25 minutes.
松软馒头 Soft Bun
做Utane团的材料:
面包粉 100g
水 100ml
酵母 1/4茶匙
Ingredients for Utane Dough:
100g Bread Flour
100ml Water
1/4 teaspoon Yeast
Utane团的做法:
1.把所有的材料拌均匀然后放入一个容器。
2.放置容器在室温下约1个小时。
3.然后,将容器放进冰箱(不是结冰处)约18个小时。
Method to make Utane Dough:
1. Mix all ingredients and put inside a container.
2. Leave container at room temperature for 1 hour.
3. Then, put the container inside the fridge (not freezer) for at least 18 hours.
做面包团的材料:以上的Utane团
面包粉 330g
牛奶粉 20g
细白砂糖 60g
鲜奶 120ml
酵母 4g
鸡蛋 1粒(用来放进面包团)
奶油 40g
鸡蛋 1粒(用来做蛋浆)
Ingredients for Bread Dough: Utane dough as above
330g Bread Flour
20g Milk Powder
60g Castor Suger
120ml Fresh Milk
4g Yeast
1 Egg to put inside bread dough
40g Butter
1 Egg for glazing
面包团做法:
1 将鲜奶和打好的蛋放进面包盘。
2 把Utane团,牛奶粉,细白砂糖,面包粉和酵母放在上端。
3 用Function 10把它搅拌15分钟。
4 暂停Function 10,加入奶油。
5 再按Function 10,当面包团发了1个小时10分钟后,暂停功能。
6 把面包团搓成想要的形状。
7 搁置馒头,让它在40度的面包机里再发30分钟。
8 过后,把蛋浆搽在馒头上,用175度烘20分钟。
*注意:我们可以用剪刀将馒头剪开,搽上奶油和撒一些粗糖,这样奶油馒头就完成了。
Method to Make Bread Dough:
1. Put fresgh milk and beaten egg into the bread pan.
2. Put Utane dough, milk powder, castor sugar, bread flour and yeast on top of it
3. Use Function 10 and knead for 15 minutes.
4. Then stop the Function and add in butter.
5. Press Function 10 again and after the dough rise for 1 hour and 10 minutes, stop the Function
6. Shape the dough into desire shape.
7. Leave the bun to rise for another 30 minutes in oven at 40 degree Celsius.
8. After that, apply egg gazing on the bun and bake it at 175 degree Celsius for 20 minutes.
** Remarks: We can make butter bun bu cutting the bun with scissor, apply butter on it and the sprinkle some coarse sugar.
